What can I expect to pay for the extended warranty for a new Class A 31V?

Like the price of the RV, an extended warranty price is negotiable!

You might consider buying one from Good Sam, instead of the dealer.

You can also buy an extended warranty after the factory warranty runs out.

In my opinion extended warranty is a gamble. The warranty might cost $2k or whatever and the dealer is betting with your money that nothing breaks. My experience with extended warranties - tried to make a claim. Never got them to pay. We just bought a 28rls in the fall. And opted for no extended plan.
