On our TT, the wall thermostat is for the heater. The ceiling grid for the AC has two knobs - one for fan/AC and the other for temperature. If the AC grill has knobs, that is where you turn on the AC and adjust the temp. Check your manual, if you can find it. What year/model do you have?
I agree that it depends on the camper. Ours has a thermostat that controls both AC and Heat and our AC unit has no knobs. So it is pretty clear in that case that all control is done from the thermostat. However other units the thermostat only controls the heat and AC controls are done from the AC unit.

I see you have some good info already. If you can post a picture of the thermostat and AC, which will help in getting you through this issue.
My knob on the ceiling broke day one, so I was not able to figure out where I had the knob. I am using a tool to turn the knob, and I was able to figure out where the knob should be (once I played with it long enough). Unfortunately I do not know where I left the manual, but my AC is very cold now. 😊
