When camping, you are the room service, so try to make it as easy to maintain as possible.
To get an idea of what to expect, watch some of the Tiny House shows and work from there. Space is a premium, so try to figure out what you need versus what you want. Personally I am trying to get to the point where I have duplicates of most stuff in the camper so that Food and clothes are the primary items to put into the camper when we go. For us it is more of a really nice bus taking us to many cool destinations and we haven't had too much time all set up in one spot, so we still have some kinks to work out on that aspect of what we pack and use.
More specifics about your family and intended uses can get you better insight into what you might want to have packed in your rig.
