We have been searching for answers to the issue of the chemical-like smell that comes out of our cabinets in our newly purchased (last spring) used 2007 Jayco Jayflight camper, when someone suggested searching a site that may have questions and answers site. This odor seems to come mostly out of the cabinet that is above the sink. The other cabinets don't seem to have the odor, at least not enough to make the plastic items that is stored in the cabinet taste & smell like the odor.. food as well absorbs the smell. We have tried leaving the doors open but this doesn't help.

Welcome to the forum and congratulations on the new-to-you trailer.

Ideas regarding the odor:
Maybe the previous owner stored some strong-smelling chemicals in that cabinet.

If your trailer previous owner used chemicals in the gray water tank AND had no water in the P-trap under the sink, the chemical smell could have originated in the gray tank.

Also, the odor from some construction adhesives can take a while to dissipate if someone made repairs to those cabinets.

Don't know what would be causing the odor in a camper of that age. OldmanAZ's suggestion makes sense. Or, perhaps there was a water leak in that area and there was mold inside the cabinet. Either way, you might try washing the inside of the cabinet with a bleach/water solution, but be careful not to get any on the countertop. Then put an open box of baking soda inside. It may take a while, but my experience is that will take care of most odors over time.
