What should a turkey be stuffed with?

Several decades ago, at the beginning of the age of information, a popular magazine had an article warning people to be aware of “experts”. Part of it was presented this way (the short version):

Twenty-five world renowned chefs were asked what a turkey should be stuffed with. There were, of course, 25 different answers and none of them compared with the answer of a real expert. The real expert, a turkey, said it should be stuffed with grit, grubs, and worms.

The only time a turkey should be stuffed is when it's being stuffed in my belly.

I will have to ask the boys what stuffing they use. I know they de-bone the duck and the chicken and use a italian sausage stuffing between each bird. i think the one they cooked last Christmas weighed in at a bit over 50 lbs. total. So good, I think they need to cook that every Sunday Shift.
