Hatch Green Chilis

If you have never had Hatch Green Chilis on a cheeseburger, you are truly missing out on one of life's great pleasures. Hatch NM is the home of Hatch green chilis and they are simply the best green chilis in the world. Last week was the Hatch Chili Festival an annual celebration of the harvest season of these green slivers of culinary magic.

Green chilis come in all heat categories from mild to "you will regret it the next time you poo" hot.

Green chilis in these parts are put into just about everything, but here are my favorites:

Green Chili Cheeseburgers
Green Chili Hashbrowns
green chili and monterrey jack topped chicken breasts aka Monterrey Chicken
Chile Rellenos (Batter dipped chilis deep fried and stuffed with cheese)

We look forward to enjoying Hatch chilies in their native environment in the near future. Our only exposure is the canned variety. Great flavor, but disappointing heat. Want to try the real thing in the "you'll regret it" category. Once we finally retire, NM is near the top of the bucket list. When is the best time to visit NM to get them at the peak?

The best time is about two weeks prior to Labor Day. The farms all up and down the Rio Grande from Hatch NM down to Las Cruces are full of chilis and the smell of roasted chilis fills the air!

Ditto on Tims Green Chile Post. Biggest problem is having room for all mine when traveling in the RV. Green Chile stew season is upon us.
On another note, New Mexico has the Best State parks going! Many are big Rig freindly and there is easy water access compared to other states.

I'm not sure of the exact dates but if you live near an HEB grocery store, they go gaga over Hatch Chilis around this time of year. You can find them grilling the chilis outside.
