Can't really tell from the photo if the leak is in the elbow to sink joint, or in the clamped line to the elbow. Could you elaborate ?

It ended up being the rubber grommet in the fitting. Was able to locate another elbow at a local supply store.

This is my first time working with Pex fittings, with the right tools (crimper & heat gun), Pex fittings are very easy to work with.

What is the heat gun for?

The heat gun is not needed, however some heat helps soften the tube, making it easier removing the existing fitting. You can also use a hair dryer. Again, only used the hair drier to make it easier to remover the existing fitting.
