Small Eco Boost & An Octane 222?
Is pulling an Octane 222 a bad idea with this truck?
Per the Ford Vin Decoder here are the truck specs.
V6 Cylinder Engine 2.7 L
Horsepower 325.0 @ 5750
Net Torque 375.0 @ 3000
Dead Weight Hitch -
Max Trailer Wt. 7200 lbs
Max Tongue Wt. 720 lbs
Maximum Trailering Capacity 7200 lbs
Per the Jayco website, here are the 2015 Octane 222 specs.
Unloaded Vehicle Weight 4,795
Dry Hitch Weight 690
Gross Vehicle Weight Rating 8,000
Cargo Carrying Capacity 3,205
I plan on having a 417 lbs sport bike in the trailer + typical camping gear so I figure ~1,000 lbs. If I tow with all the tanks empty I should be fine correct? Every dealer is telling me I'll be fine but we all know they're trying to make a buck.

Looks to me like you may go over hitch weight by a couple pounds but you should be ok. Now I'm not so much a "tow cop" as others on here who surely will have a different opinion. I personally believe that there is some +/- on the numbers provided.

Jayco's published "Dry Hitch" weight and "UVW" weight are not representative of the actual "as-shipped" weights. I would check the Octane's UVW weight noted on the yellow sticker for better starting point for the UVW.
For example: (4,795lb UVW-published) + (350lb as-shipped delta-approx.) + (100lbs dealer battery, etc.) + (1,000lb cargo) + (no fluids) = 6,245b gross weight
Recommended loaded tongue weight range of 13% to 15% of TH gross weight: 6,245lbs = 812lbs to 937lbs loaded tongue weight range.
IMO the TV you described wouldn't be a good candidate for the 2015 Octane 222.

IMHO you will be over your Rear GAWR before the max trailer weight of 7,200#. A trip to the scales would get your TV weights. The difference between the rear weight and Rear GAWR would give you an idea of the Max tongue weight which could be back-calculated to an estimated Mac TT weight.
The CAT Scale is your friend.

What is the available payload (check door sticker)?
With that truck it's probably too low for the hitch weight plus gear and passengers.

Just wanted to update this, thanks for the welcomes.
I got talked into a test pull of a bigger unit. Glad I did. That motor is amazing. We bought the octane 222 and I've already pulled it roughly 400 miles through New England. You know it's there and it does slow you a bit on the hills but, leveling hitch, sway bars and a good brake controller it's easily managed. Transmission has yet to even climb above 200 degrees. Normal conditions it's about 185 so I'm ok with that.

My 'little' 6 cylinder eco boost (un modified), out tows every V8 and some V10's that were on the market when I bought it. Towed my 9000# load into the high country of colorado, will tow 11500 lbs / full tanks / full gear up some of the steepest grades in the united states without a problem. My only limiting factor was the 65 mph rating on my trailer tires. Times have changed. If you haven't experienced it, kind of pointless to say a modern turbo charged V6 isn't worthy... cause they are.
As my daily driver, it also gets 20 mpg hauling me to work and costs about 20 bucks to do the oil. Zero complaints with a TV that can 'pull' all of that off.

My father just bought an extended cab with the 2.7, his payload is almost 1800#, which means you should be OK with payload.
My understanding is that your hitch is rated to 500# weight carrying and 1200# with a WDH, so the latter is a must for you. Regarding the actual weight on the hitch, you will not know until you head to the scales after tuning in your WDH. Making sure your tow vehicle is level is most important, so don't try for a certain hitch weight, just follow the WDH instructions.
You should be alright, the 2.7 pulls well, but you'll be on the turbo the whole trip so you mileage will be not-so-good. Also, you likely do not have an external transmission cooler so keep an eye on your temperatures.
