IMO, to much 5th Wheel......, wouldn't tow it with my 2500HD 6.0L/4.10 gasser.
Not sure which model FW you are referencing, but the Eagle Premier's average about a 15,000lb GVWR. The UVW of 11,717lbs is not the Ship Weight (yellow sticker on FW), so with the FW I would add another 700lbs, so for Ship Weight I would assume 12,417lbs.
Our personal loading habits may differ.., but an assumed FW loaded weight: (12,417lbs + 1,000lbs cargo, no fluids + 200lbs dealer batteries, etc.) = 13,617lbs Loaded FW Weight. Loaded pin weight @ 20% - 25% = 2,723lbs - 3,404lbs.
The towing spec's (Tow Ratings, Payload Capacity, etc.) on the GMC is based on the curb weight...., as stated you have to subtract the passenger weights, TV options, and TV cargo. The best way to confirm what you have to work with is go to a CAT scale and weigh your truck under "loaded" conditions. Subtract the CAT scale weight from your TV's GVWR, the remaining weight is for the hitch weight, FW loaded pin weight, and any weight not accounted for at the CAT scale.
