We tend to rush out of town after work...so we usually stop at a Skyline Chili on the way. It's quick and all 4 of us like it well enough.

We've also done red beans, sausage & rice at the campground. Quick & easy...

We usually pick up fried chicken, BBQ or bring leftovers from home to arm up in microwave for that arrival dinner. Way too tired after travel & set up to do anything more

I really miss skyline chili. I was in Cincinatti to visit P&G and was introduced to it. Nothing like it here on the west coast. The next best thing is to get on amazon and order some... but it's expensive to have the cans shipped.

Peggy picks up a Pizza. When we are setting up the camper we turn the oven on. We keep a pizza stone in there. Put the pizza in, and when we're finished we sit down to some nice crispy crust slices. As my granddaughter says "That's yummy Pop Pop"

Nothing says camping like hot dogs cooked on the fire and home made chili. My kids would be pretty disappointed if we tried to feed them anything else on the first night. If its going to be a bit later than usual there's snacks for the drive.

We usually check-in early afternoon but in your scenario, I'd have something ready in the fridge. What that something would be depends on what your kid likes. That or research what's near your destination and pick up something on the way in... I mean pulling in at 6-7pm is too late to fire up the grill or make a fire and cook a meal considering you still have to unhook and setup everything.

First night meals are always our easiest meal of a weekend trip. We never go out to eat.

We ether make it fresh, reheat, or something processed that is really easy to prep. Our rule is it has to be really easy the first night and just easy for the rest of the trip.

Most of the time we make something the night before alongside that night’s dinner. Toss that extra meal in the frig. Once setup, we’ll warm it up, maybe open a bag salad, and call it good.

Last trip the DW made up Sweet and Sour Meat Balls, the night before (premade meat balls, not as good but it works). The meat and sauce was in one container. The veggies were cut up in a bag, tossed them together and warmed it up. Veggies were warm, but still a little crispy, Dinner was ready in 5-6 minutes.

Sometimes, we might buy pulled pork (or similar) for BBQ sandwiches, or even make our own. If we have leftover roast, shred it, freeze it, when needed pull it out, warm it up, add a little BBQ sauce, and call it good. Maybe add a can of baked beans, some chips, or a bag salad.

Walking tacos are always a hit. Precook taco meat at home. Need small snack size bags of Dorito’s, usually two bags per person is about right for us. Cut veggies ether at camp or at home. Open one end of the bag, breakup the chips, and add everything into the bag, add hot meat and toppings of choice. Eat out of the bag, very little dishes. Another variation is smoked chicken walking tacos, very tasty. The only bad part of this meal, is the DW insists on fresh guacamole, so we make it in camp. It really only takes a few minutes, but it is the hardest part of the meal.

We did make these funny little pizza rolls once. The DW found a recipe for them, made them at home one afternoon, and it worked fine, tasted good too. She tried it in the camper one Friday night and it was a lot more work, and the oven size was too small to really get enough of them in the oven. They tasted good, but it was too much work and frustrations for the first night. So some meals get axed from future campouts.

Any meal you make at home really can be a good first night meal to, if you do a little prep work in the days leading up to the trip.

First nite dinner for us is almost always BLT's... Easy to make with little prep, serve on paper plates (easy clean-up), and everyone likes them....

being new to TT camping we have been taking a 1/2 day vacation on our leave day. stop by a great local seafood store, we get crabc akes they make. 4 minutes each side with butter on the griddle, and a pre prepped salad was our set up meal last weekend. I might add the high was 77 in the mountains of North Carolina.

we actually live in South Carolina, just across the border from Charlotte.
we have always gone to the NC mountains whenever we can get away. just about 1.5-2 hr drive. We have thought about retiring there as well but our grandbabies are here, and NC taxes are much higher than SC.
So we got this camper instead, we only have 8-10 years till retirement but wanted to start enjoying life more now.
