Thanks for the help. Here is my finished product. I was able to mount to the edges of the span into sold studs.

This is actually a spice rack I found that fit the dimensions of the space.

I got a small I-bolt and screwed into the tv block in the wall. Then I use a wisely fit bungee cord to keep the TV jostling around during travel.

Congrats and enjoy the camper. I have the same 2015 model and tow with a 2005 F150 5.3L (9500Lbs). I can comfortably tow but I can definitely feel it and do not feel comfortable negotiating hilly...
