Yes you should still sanitize the entire water system. Bacteria can and will grow in your water system. The fresh water will have to go through the water system in your RV and can pick up bacteria...

I will sanitize my water lines when I de-winterize my camper. Then add antifreeze or blow out my water lines when I come home.

I do that at the start and the end of freezing...

I do that at the start and the end of freezing weather. Once it really gets cold and stays cold I only use drains to pour water down and then pour antifreeze down the drains when heading home.
