Chalk this one up to newbie inexperience.
After reading the install and owner's manual I got a feel for how the fridge works on propane. The charts at the back helped a bunch. Below in the picture that thing on the right side is called the burner box. Mine had it's door open when I checked, which is not how it's supposed to be. That was not the cause of the problem however, although it would probably cause it to blow out if I was pulling it while running.
Essentially the burner orifice was dirty between the electrode and was bridging the gap, causing it to not fire. After a quick cleaning and brushing off the soot, it fired right up! I'm happy
This is obvious to old owners but I hope someone like me will read it in the future and have it help them.
