Angry Outside water setting panel

We bought a use 2007 Jayco Eagle 291 RLTS. We are not familiar with the outside panel for the water. It has a diagram of settings. One says normal, one says city water and one says to sanitize the tank and lines.
We are confused by the normal setting. When do you use that setting? This is so different from our previous fifth wheel and the owners Manual doesn't show it and is very basic for many models.
We also sanitized the tank and lines without bypassing the water heater as we did not know where that was either.
Any help would be much appreciated!

Normal would be when you are using the pump. The bypass valves should be inside directly behind the water heat.

Thank you Grumpy! I thought that is what is was but wanted to be sure.
I had look behind a panel I saw and found it to be the bypass valve. Thanks again!
