Filling fresh water tank - how do I know when full?

I just bought a used 2003 Kiwi 23B Hybrid and am still learning on how to use it. The book doesn't really explain things too much, but it said when filling up the fresh water tank, make sure you don't overfill it. My questions is, how do you know when it is getting full? By the little indicator panel inside the camper that tells you how full your fresh/gray/black water tanks are? And if so, does that indicator run off the battery so I can monitor it while filling it up at the station?

our 23B had an overflow for the fresh water tank. But is was a '12.

We have a 2002 Eagle and our panel doesn't work so I cannot go by that. Our tank however is under the couch so I can just watch it fill. When we have about half a tank I usually turn on the pump and turn the faucets on to get the air out and get the water heater tank filled. This gives us another 6 gallons then we just continue to fill until we hear water coming out under the camper. This means that it has hit the overflow. I guess that is how we do it, right or wrong, works for us.

Yep just fill until it flows out the overflow, fill port or both

I added a valve to the overflow on our x213.
I found that by the time we got to the place we dry camp that almost half the water had puked out the overflow while driving.
