I had this published in the RV Centennial Cookbook
Uses a 12inch aluminum DO.
1 can crushed pineapple
1/2 cup sugar, brown - 1 use 3/4 cup
1 package cake mix - we use yellow
Line dutch oven with aluminum foil for easier cleanup
Grease pan/foil with oil or butter
Line pan with pineapple pieces, brown sugar, and juice.
Prepare and pour into pan the cake mix per manufacturers instructions.
Cover and place in heat.
Put 10-12 briquets on top and 8-10 briquets under dutch oven
45 minutes
When done turn the whole thing over on a pizza pan and remove the foil.

I use pineapple rings all over the bottom of the DO then put a marschino cherry in each ring hole and in between adjacent rings...can't have too many marschino cherries. A little heavy on the brown sugar and WOW!

Crushed pineapple makes it easier to cut but you are right in never having too much brown sugar.
Even made it one time and forgot the brown sugar until the last minute and just dumped it on top before cooking. Still worked great.
We also try cherries with chocolate cake and apples with spice cake.

Breakfast Pizza
12 inch Dutch Oven
1 can crescent rolls
1 lb sausage; browned & drained
3 tablespoon red bell pepper; diced
3 tablespoon yellow bell pepper; diced
1 cup frozen hash browns; thawed
1 green onion; sliced
1 cup cheddar cheese, sharp; shredded
3 eggs; beaten
3 tablespoon milk
1/2 teaspoon Salt
1 teaspoon black pepper
3 tablespoon parmesan cheese
1. Unroll the crescent rolls.
2. Line the bottom of a 12" Dutch oven with a layer of flattened crescent rolls.
3. Sprinkle evenly with sausage, bell peppers, hash browns, green onion, and cheddar cheese.
4. In a medium bowl whisk together eggs, milk, salt and pepper.
5. Pour egg mixture evenly over top of pizza.
6. Sprinkle with parmesan cheese.
Cover and bake using 8-10 briquettes bottom and 12-14 briquettes top for 20-30 minutes until eggs are set.
Scoop breakfast out when done.
We've had to do this one a little longer to get the eggs totally done and I always line the DO with foil for easy cleanup

Kang Treats
Banna
Hershey bar
marsmallow
Slice a banna the long way while it is still in the skin.
Only cut thru one side to make a pocket.
put in piecies on hershey bar and marsmallow
double wrap the banna in tin foil
put the banna on a grate over the fire (High heat) for 20 minutes.
Flip a couple of times.
I know 20 minutes souds like a lot but depending on the heat it may not be enough.
When you are done let them cool a little and you will be able to eat it with a spoon right out of the peel.

Great Main Dish
Meat Loaf
3 lbs. of ground beef
3 eggs
2 cups bread crumbs
1 cup of ketchup
1 large onion
1 cup milk
2 tsp. salt
1/2 tsp. pepper
Mix beef, 1/2 cup of ketchup, and the remaining ingredients thoroughly. Spread into lighly greased Lodge 10" or 12" camp Dutch oven.
Stew at 350º for 60 minutes and top with remaining ketchup (and brown sugar, if desired) and bake for 15 minutes

This isn't my recipe but I made it last weekend on our camping trip for a pot luck dinner on Saturday night. It turned out great.
It is a vegetable dish called "ratatouille"
The “Official” list of Ingredients
1 lb Onions, small dice
4 ea Bell Peppers, small dice
1 lb Zucchini, small dice
1 lb Eggplant, skin removed, small dice
4 cloves Garlic, minced
2 lbs Tomatoes, diced (canned ok)
8 oz Mushrooms, quartered
6 oz Olive Oil, for sautéing
1/2 cup Parsley, minced
1 Bay Leaf
1/4 tsp Thyme, dried
2 tsp Basil, dried
1/2 tsp Oregano, dried
The “Official” Procedure
Prepare the vegetables: Peel the eggplant and cut into small dice. Dice the onions ¼”. Remove the cores and sees of the peppers and cut into small dice. Mince the garlic. Cut the mushrooms into halves or quarters depending on size
Sauté onions and peppers in olive oil for 1 minute Add Zucchini and sauté for 1 minute. Add eggplant and mushrooms and saute. Add garlic and saute. Add tomatoes and seasonings.
Cover and cook in a Dutch Oven about 30 minutes at 350 F until vegetables are tender and flavors are well blended. If the vegetables are too juicy, cook uncovered for a few minutes to reduce.
Adjust seasonings as needed. Serve hot or cold

We cook a lot of chicken cornish game hens, and roasts in the dutch oven.
Chopped carrots, Onion, Celery, usually garlic, sometimes basil, or rosemary.
I just whip the stuff up and it comes out great. We use a 12 inch cast iron dutch oven. I never line it will foil.
We have done cakes to. They come out great.
I also cook up a big pot of chili once and a while.

Dutch oven cobler:
line dutch oven with foil. Pour in one 16oz can of peaches in heavy syrup. Add one can 7-up to peaches, do not stir. Carefully add one box of white cake mix on top, do not stir. Top cake mix with a sprinkle of sugar. Set covered dutch oven in coals and cover top with coals. Bake for 30 mins. Carefully remove from coals and coals from top. Let stand 20 minutes. Open up and enjoy.

1 brick of graham crackers, crushed finely
1 stick of butter
1 can of sweetened condensed milk
1 cup of peanut butter morsels
2 cups of milk chocolate morsels
Melt the butter and mix with graham cracker crumbs then press into a layer in the bottom of the DO.
Mix the morsels all together then spread them around on the crust.
Pour the sweetened condensed milk evenly over the morsels.
Bake for about 20 minutes. Let cool for about 1 hour before serving with copious quantities of milk.

We don't actually use recipes with the Dutch oven. We do a simple breakfast by cooking up bacon and / or sausage, the drain (usually into the fire, unless my wife is watching), then add biscuit dough to the top. Makes a hearty breakfast for my wife and I, plus up to four kids (if all are at camp - the older two don't always make it). We also do chili over the fire. On Columbus Day, we plan on trying jambalaya (Paul Deane's recipe, although I may have spelled her name wrong).

Beef and Barley Stew
Chuck tender roast, cubed and browned
Medium onion diced
Celery 2 ribs diced
Carrots 8 cut in chunks
Cannellini beans 1 can rinsed
Garbanzo beans 1 can rinsed
1 quart home canned green beans
Squash 1 cubed
8 medium potatoes cubed
1/2 cup pearl barley
2 boxes beef broth
1 large jar Heinz beef gravy
I cook this in deep 12 quart Dutch oven hanging from a tri-pod over a fire. Brown the meat in the oven with just a bit of oil, then add the veggies and cook until almost tender, then the beef broth, gravy and pearl barley. Cook at a high simmer for a couple of hours.
This is a very good recipe and is always a hit.

We love good old chicken and dumplings, right out of the better homes and garden cookbook. (Cookbook is available as a free app) we pre-measure the dumpling dry ingredients into a zip lock and then add the milk when we're ready to start cooking. We have a small lodge iron DO and love it.

Check out Byron's Dutch Oven Recipes. spread a little olive oil inside oven, use canned crescent rolls for the crust, top with pizza sauce and your choice of toppings, 8-10 briquettes on the bottom, 16-18 on top for 20-30 minutes until brown edges and bubbly cheese.
