Also make a plan on how to easily access the roof air conditioner when necessary.

Fortunately, it should be just unbolting a few bolts to get access to the air conditioners and I'll make sure those panels have enough slack in them to maneuver them about.

I'd like a future project be to hinge them so that I can just open up some simple connectors and get access. But that's a future me problem.
