Unfortunately, owner's manuals are very generic to the series and not to each model number. That would be horrendously expensive, and they would be inaccurate at every production change they might have to make mid-year because of supply issues and option differences. Not defending it, that's just the way they are.
Whether you bought it from a dealer or an individual, I'd have them walk you through its operation, and where all the components are since you've never had a trailer before. We can answer some of your questions, and maybe someone that has the same model will chime in.
For starters, yes, the thermostat will control the furnace, and maybe the A/C if it's set up that way. Propane tank has to be turned on, and gas has to reach the furnace before it'll fire up and stay on. The only pilot you have to light is under the oven when and if you plan to use it.
Your power center will be a square-ish black or brown plastic panel somewhere down low and may have a push to open/close door on it.
The one thing you NEVER want to do is start the water heater without being absolutely sure it's full of water first. We'll do our best to help you out, but it sounds like you have a lot to learn about your new-to-you RV.
