2016 31DS dinette question

Our dinette is used mainly for our laptops and occasional meals. We eat outdoors more often than not, so inside eating could be relegated to foldable TV trays.

I was wondering, has anyone has removed the dinette and configured something else for that area? The dinette is on a slide with the fridge. The seat nearest the fridge has gas line and electric coming in through the slide floor, so total removal of that seat wouldn't work. The other one is fine. I'm not too concerned about losing storage.

Would love to hear what others have done or any suggestions.
