Is the fan on low? That's usually the problem keep it on high.

It could be either be low airflow or low refrigerant level. Have you checked the return air filters to make sure that they were clean.

During the peak heat period, do channel or dump the air from the AC unit?

Make sure the divider between supply and return air has no gaps. Pull the entire plastic cover on the inside of the trailer and inspect for gaps. If any air manages to bypass from supply to return, the unit will eventually freeze up on longer run cycles.

On the evaporator coil (cold one) check the location of the thermostat sensor. It should be clipped to the fins of the coil. If it is just hanging loose, it will not work properly. Its function is to sense the temperature of the coil to turn the compressor on and off to prevent freeze ups.

Often it is an air flow issue. How often do you clean the air filter? I tend to clean our filter about every 5-7 days of use. Ours use two cheap foam filter thingies, that I usually just knock the dust out of. They plug up quick.

Also have you looked on the roof to see if the coils are plugged with crude such as cotton from a cottonwood tree?

Another possibility is the metal cover is installed on the wrong side. (intake instead of discharge.
