Is AC On A Thermostat?

We just have the one centralized AC on our hybrid. All the controls are on the unit and if you want AC the unit is always running.

Now I have central AC in my house but the AC will shut off once the house cools down to the desired temperature and will fire up again once the house warms up.

What happens in a TT that has ducted AC? Is the AC and heat controlled by the same thermostat? Does the AC function like the heat to shut off once the desired temperature is reached and then turn on when it warms up again?

It should. When we were in Zion this past spring, the AC ran a whole bunch, however the temp outside was 95 and we didn't have much shade. It eventually did shut off when reaching the temp we thought we had set it at. Probably just hasn't been able to get the trailer down to the proper temp. We set ours around 75 or so and it finally got there. If you can't get it to shut off, you should take it back to the dealer to see if it needs to be fixed or at least adjusted.

On our ducted 5er, yes, the heat and A/C are both controlled from the same thermostat, and will shut off when the set point is reached, and come back on when necessary to maintain the temp.

Non ducted, such as your hybrid, the fan runs continuously and the compressor cycles, with ducted systems you can set the thermostat so that the fan shuts off when the set point is reached or let it run constant.
