No hot water

How come I don't have any hot water 2016 jayco jayflight???

Do you have water flowing from the hot water faucets? Is the pilot light lit in the hot water tank? If the pilot is lit, does the burner come on?

Water is flowing through hot water taps and its automatic so doesn't have to be lite and I'm running it of shore power

I'm only familiar with the gas HW tanks, so I may be of no help.

Obviously, it must have a burner of some sort, whether is be gas or electric, and the burner must come on when the water is below set point temp.

I'd look for an on/off switch, and make sure the fuse / breaker is OK. I would guess the owner's manual would be the first first choice for operational info.

When we did our PDI the system was running and the dealer showed us how to start and shut it down.

did you un-bypass the heater when you de-winterized? are you using propane of electric for heat?

I think the 2016 models do not have a pilot, they have Direct Spark Ignition. Some things to check:
Is propane tank turned on and lines purged of air? Light stove to do that. If stove won't work perhaps a propane delivery issue.
Is red light illuminated on water heater gas switch? When water heater turned on it will try to light 3 times. If flame is not sensed after 3 attempts it will go into "lockout". To reset you must cycle the power switch back off and on again.
Is battery charged or are you plugged in to shore power? DSI heaters need 12-volts to work.
If trailer was recently de-winterized, were the water heater bypass valves fully returned to "normal" position?

If it was still in bypass water would flow, just not into and out of the water heater. That is the exact purpose of bypass, so antifreeze can flow through all the lines without filling the 6 gallon tank.

there is water flow when it is bypassed, and when normal, water flow is now through the tank, either way, there is still flow at faucets
