Has anyone ever drilled and tapped a drain hole for an 1/8” pipe plug in the bottom of the impeller housing or know of a reason not to? Seems like a good way to be certain the system is totally empty.

That certainly would be one way to do it.
I recently had an issue with my 1-1/2” hose springing a leak and when I went to remove it I found it was held on with a small hose clamp over a nipple. After I took the hose off I found that the nipple is actually threaded into the macerator housing. I then removed the threaded nipple and put a threaded plug into the opening once the system was completely drained. Then I added RV antifreeze to the system for winterizing. I purchased a new replacement hose and will remove the plug and install the hose in the Spring. It’s a pretty easy task and very accessible on my rig and it will also allow me to completely empty the hose without having to run RV antifreeze through it.
