That's a subjective question... I can spend weeks in a place like that but some folks I know drive through and say... "What's the big deal?" So, if you like to hike and explore, then at least a week in each place. If not, a couple of days will suffice. I once spent 18 days in Big Bend N. P. But....... I'm not that young any more.

We stopped at Arches NP for one night that turned into a week, Stayed at Black Canyon of Gunnison an extra two days.

Be flexible and stay until you are satisfied then go on. Check out smaller less well known parks in between and you may be surprised.

There is always a new place to see down the road, but stay as long as you are happy.

On our first trip ever to that area last fall, we stayed 4 in Zion, 4 in the Bryce area.
You can do the drives for each (via shuttle in Zion) in a day. But that's just stopping at most turn outs. 4 days in Zion got us three days of doing the drives, and four medium-short hikes, plus a day to the back side that far fewer go to. Add more days if you want to do some of the longer hikes.
For Bryce, it's smaller, so we took two days for driving the road and taking a medium hike. Then spent a day going to Kodachrome State Park and hiking there, and a final day hiking a slot canyon in the Grand Staircase NM. Add more days as desired. As others noted, you can spend weeks exploring each area.

Both places were full, so we had to stay at commercial CG's, which entailed some commute time back and forth.

My wife says three days at each would be her advice.
