Love the dutch ovens! I have tons of cast iron cookware that I have picked up here and there. We have done Hot wings, Corn chips, Chili, Bread, even did enchiladas in one and cherry dump cake in another.

I love to cook but have never been very good with charcoal.... I am SO gonna try this with my DO on my next camping trip.... thanks for all the great info, ideas and pix!

Just use one of the recipes that came in the box with your new Lodge oven. Follow the recommendations on the number of coals. It's easy to overheat a Dutch Oven.

Now there is a dutch oven buffet! I tend to put a few more coals than recommended but I turn both my oven and my lid on a regular basis to keep it from burning.

Just curious if anyone has a guide for the # of coals for top and bottom for degrees? Someone told me there is one and that 17 coals on top and 10 on bottom is 350 degrees. Ok, on the cherry dump cake do you use cherry pie filling or what and how much? I LOVE CHERRY COBBLER!!! Oh and of course, with vanilla ice cream.

Take the diameter of your oven, add 3 for the top, subtract 3 for the bottom and that will get you in the ballpark.

For example with a 12" DO you would use 15 briquettes on top and 9 on the bottom.

I did a "taco bake" last night that I have wanted to try for some time now.
This is my recipe that I concocted, I like it SPICY!! You have been warned!
If you want to tame it down modify accordingly!

The tortillas I used were the flour type, they got a little squishy, I think I will use a hard corn flat tortilla next time...
I use an 8 qt. 12" deep DO, could be done in a 4 qt. 10", adjust the coals, a 12" 6 qt. would be better.

Let's GO!



1 1/2 lb ground beef seasoned with salt pepper
1 can refried beans
2 cans RoTel brand tomatoes with chiles, use the mild or wild.
1 packet of Chi Chi's brand taco seasoning with green chilis or the one you prefer
Cottage cheese big tub, 1 pound shredded cheese, your choice, 1 pound sour cream.
1 tsp fajita seasoning optional
Package of tortilla shells, flour or corn 6-7, 12" shells

START YOUR COALS! I use a chimney.

Brown beef, add beans, RoTel and seasoning packet, set aside.
Mix colds, Cottage cheese, shredded cheese, reserve 1/2 cup of cheese to top the final layer, sour cream, and fajita seasoning.
Layer like lasagna, 1st layer on bottom beef bean mix, about 1 1/2 cups.
Layer of tortilla
2nd layer cheese, 1 cup or so.
Layer of tortilla
3rd layer beef and cheese mixture together on this one using all of the cheese mix. Reserve some of the beef for the top.
Layer of tortilla
Remainder of beef mixture and top with 1/2 cup cheese.


10-12 coals under bottom of DO 18-22 on lid, rotate lid and bottom 1/4 turn every 10 minutes.
Takes 30-40 minutes? If you want the cheese on top more brown add more coals for an extra 5 minutes.
I always let casserole type dishes "rest" for 5 or so minutes before cutting and serving.
Serves at least 6 maybe 8.

I'll give some of my dessert tips later....

LOVE the Dutch oven!

LOVE my dutch ovens. I cook with cast iron at home. Heavy as heck but so much better for you than Teflon. I have only used my Dutch oven on a grill and not a fire. I'm a total rookie and foodie camper. I have made cheese fondue, biscuits and then the sausage gravy in it, scrambled eggs with potatoes and onions and lots of other things while camping. We have even made glass jar cupcakes. FamilyFun.com has a cute and fun recipe. I really like cooking in packets of aluminum foil where I can put some kielbasa and peppers and onions in packets and throw them on the grill.

Going this week to Iowa to get our new X18D and camping all the way home. Won't have my goodies with me and I'm afraid of what I'll make. No Trader Joe's to stop at to stock up. Maybe I can find Sprouts. Couldn't afford gas if I stop at Whole Foods.

20 briquets on the top - 10 on the bottom. 2 cans of pie filling (apple and peach are good). Line dutch oven with aluminum foil for easy clean up. Cover fruit with one box of yellow cake mix, cover with slices of butter. Cover and load charcoal. Check after 20 minutes or so. Usually takes 30-40 minutes to brown.

Last weekend I made chicken and dumplings in my dutch oven.

There is a "Dutch Oven" cooking with Dummies book that has great info and recipes in it!!

I am really excited....my son and his good friend just crossed over to Boy Scouts....we are all going camping next week (outside of scouts) and the boys want to learn how to cook all kinds of dutch oven recipes! It will be fun to have them practice on us and will then be cooking at Camporee in a few weeks....A whole new generation of Dutch Oven Cooks!!
