I use the same method TXBlackpot. I believe it is called the Dinwiddle method or something close to that...lol!!! Lots faster and easier than, like you said, trying to do all that math in your head!!

You don't need a calculator for this method. Take the diameter of your DO add 3 for the top and subtract 3 for the bottom. For a 12" oven 15 on top, 9 on the bottom.

Baked Ziti
16 oz pkg Ziti pasta (Rigatone)
1 lb Italian Sausage
2- 27 oz Spaghetti Sauce
16 oz Cottage Cheese
6 oz Provolone Cheese
6 oz Mozzarella Cheese (Grated)
1/2 C Parmesan cheese
Cook pasted as directed. Drain and set aside. Brown sausage in Dutch oven. Add spaghetti
sauce and simmer for 15 minutes. In separate lightly oiled dutch oven layer ½ pasta, ½
provolone, and ½ mozzarella, ½ meat sauce and all cottage cheese. Repeat layers of pasta,
cheeses, and meat sauce. Then sprinkle with parmesan. Bake about 30 minutes, or until cheese
and sauce are bubbly. 6 to 10 coals on bottom and 14 to18 coals on top.
Tater Tot Hot Dish
1 1/2 lbs. hamburger or chicken
1 medium onion, chopped
1/2 tsp. garlic powder
1/2 tsp Montreal Steak Seasoning
1 10 3/4 oz. can Cream of Mushroom soup
1 10 3/4 0z. can Cream of Chicken soup
1/2 cup half and half or milk
1 cup frozen peas and carrots
1 2 lb. bag frozen tater tots (3/4 of a bag covered a 12 inch oven)
2 cups shredded Cheddar Jack cheese
Saute hamburger and onions over a full spread of coals in dutch oven until onions are soft and hamburger is browned. Drain. Arrange 12 coals in a circle around the base of the oven. Stir in garlic powder, steak seasoning, soups, half and half and frozen vegetables. Mix until well blended.
Cover completely with tater tots.
Place lid on oven and bake at 350 degrees, with 16-18 coals on top, for 25-30 minutes or until soup starts to bubble.
Sprinkle with 2 cups of cheese, cook 10 minutes longer or until cheese has melted and hot dish is brown on top.
Serves 6-8.

Between the last 2 camping trips we've made a meatloaf, Cinnamon rolls, two layered chicken enchilada
Stuffed peppers
and a marinated pork loin.
We try to use the dutch oven on every camping trip. We use the plus 3 on top and minus 3 on bottom.

We have 4 camp Dutch Ovens. A 10", 12" and a 14" in cast iron. The 4th is a 12" Aluminum Dutch Oven. Bought the aluminum DO for overnight canoe trips. Lighter and no rust. The 10 and 12 inch cast iron DO's are the ones we use the most. We've done deserts, roast, mountainman breakfast, biscuits, gravy, pizza, etc. In the DO's. Homemade pizza in the DO is really good! Going to a Dutch Oven Gathering (DOG) is a lot of fun an educational. Some folks are really creative and fix things that will surprise you (i was surprised by a cheesecake done in a DO).

New to the dutch oven scene, but looking to try it out. Does it really only take 30 -45 minutes to have complete meal cooked and ready to serve? Are Lodge dutch ovens the best brand to try?

I believe Lodge has the best reputation out there.
Timing will vary, depending on what you make. The mountainman breakfast(last photo below) sure seem to take a long time. If you're just baking some Grands/Pillsbury biscuits it's much quicker...
I highly recommend them, if you're an avid camper. I try to use my daily when camping, if not more than once/day.

I have a Wenzel 1887 set. I like that everything in the set (DO, Griddle, Pan) come with heavy zipper covers.

Dutch Oven Chicken and Rice
2 cups uncooked white rice
2 cans cream of chicken, mushroom or celery soup, condensed
4 Cups water
4 6 boneless, skinless chicken breasts
1 envelope onion soup mix
Grated cheddar cheese
Stir together rice, cream soups, and water until well blended in Dutch Oven.
Place chicken over rice mixture and sprinkle with dry soup mix. Bake 60 minutes at 350 degrees using 10 coals on bottom and 18 on top. Sprinkle desired amount
of cheese over top and let melt before serving. Makes 4 6 servings

Dutch oven brisket.
Large Dutch oven placed on old sheet of tin. 15 coals under and 10 on top. Only add couple to top if needed later on.
One whole brisket, salted and peppered, 2 cans mushroom soup, one whole onion.
Let it cook all day, 10-12'hours,adding coals as needed to bottom to keep simmering. If you can cook you know what to do. Falls apart.

Don't know if it was mentioned, but if traveling on Interstate 24 north of Chattanooga, TN, the Lodge Factory Store is located in South Pittsburg, TN. They have everything Lodge and a large selection of factory seconds. Saved over $20 for a factory second Wok. Also Russell Cave National Monument is in the immediate area. Stop at a TN visitor center for the Lodge info card. Unless it's changed, free (small) cast iron fry pay with purchase.

The DW loves the Dutch oven. Makes great peach cobbler and a host of other delicious recipes. She loves to experiment.

We bought the Dutch oven, the carry bag, tool to remove the lid. we have drove around with it in the camper for 4 years never used it one time. Whenever we think about using it. We think about all the work and just cook the meal another way or get takeout. or don't have enough time to use it and go sight seeing and hiking etc.
I would like to use it one day thought.

I understand, we do not use ours as much as I would like to. Main reason, we tend to hike a lot, and I like it for slow cooking. With that said it works great for quick cooking too. It is also way easier to clean than most normal pots and pans.

Love my Dutch ovens at home.. Too heavy to take camping .. I bake bread in them and use them for slow cooking.. Camping to us means quick meals..
