Campfire potatoes

We slice potatoes (you can take the skin off or leave it on, whatever you prefer) and put them in tin foil. Then pour a little olive oil over them and shake some season salt on them. Completely wrap them in tin foil and cook them on the hot coals. Several minutes on both sides and BAM! Let the taste buds party begin. I forgot to mention that you can add chopped onions in there as well.

Thank you familybonding, you just completed my July 4th menu. The potatoes (yes, with onions) will go good with Angus beef ribeyes. And I will leave the skins on.

Another variation we use a lot when grilling is adding strips of green, yellow and red peppers, onions and fresh white corn stripped off the cob to the sliced potatoes. Drizzle on some olive oil add your favorite seasonings, close up the foil tightly and throw it on the grill while your meat is cooking.

familybonding, I used red potatoes and forgot the seasoning at home (only had salt & pepper) but did fry them in olive oil and they were so-so, only because I didn't follow your instructions. They were allright with ketchup but next time, we will use seasoning and white potatoes. Thanks for the idea....will definately work on perfecting this on the next trip.

If you don't have a fire you can do the same thing in the microwave, without the tinfoil.

We learned to cook with aluminum foil when my son was a cub scout. We called it "Hobo (whatever)". Now we know how to make "Hobo Taters"! Thanks for sharing

dg1971, sorry to hear it didn't go as planned. Don"t you love when you plan something out and then forget an ingredient. I'm sure next time will be better. Now you have an excuse to go camping again so you can try again.

familybonding, I like what you said.....I now have an excuse to get back out to the campground in a couple weeks, this time with season salt and white 'taters. I will get it right next time....thanks for your encouraging words. I'm hungry already!

you said that you used red potatoes. That sounds like that would have been good. Did they not soften up or what was the problem?

Red potatoes are my favorite but besides the lack of seasoning, I did not completely wrap them up because I also had very little foil, then overfilled it with olive oil, then poked a hole in the bottom of the foil I had and the oil hit the fire...instant inferno. I just did it all wrong but blame only myself. The DW wanted to inventory the RV to see what supplies I needed before we left but I was too anxious to get on the road. I will do it better next time. What I salvaged was pretty good with ketcup but done right, I know your "recipe" will be much better.
