Campground pizza

Whenever we go camping, I will usually make pizza one night. It’s always a favorite of my kids but it’s a big hit with fellow campers too as I always make extra to share. In fact, i got a chance to make some pies for another JOF member last week. MadJokerTx, his family, and another couple joined me and my family for some food and drinks at our site in Lajitas by Big Bend. I made 12 pizzas (plus 2 gluten free pizzas for DW). I’ve been asked before to share my tricks or secrets. No real tricks or secrets. Here’s how I do it if anyone is interested.

For those of us who don't have a stand mixer in our TT...

Pizza - and bread - dough can be made in advance and successfully frozen, to be thawed and cooked on the road.

I do that often as well. I make dough at home and freeze for use later

I'll admit to posting this just back on New Year's Day on Tom's mod page - I just can't help but hit this softball! Hopfully I'll have the pleasure of meeting you out on the trail, Tom, and sampling "The Pie"!

No. Not the same recipe. I use Caputo “Fiore Glut” flour. Recipe from the package. I tweak the recipe a little when I make it [emoji3]

1000g Fiore glute
800 g water
20 g yeast
20 g olive oil
40 g salt

Check out this video. I’ll have to warn you that it is NOT as easy to work as he makes it seem. The dough is very sticky. I have finally got it down after a lot of trial and effort. I can tell you that it is BY FAR the best GF pizza you will ever eat. I am kinda a pizza snob and definitely love gluten but this recipe holds its own up against anything.

I’ve actually been thinking of doing a video on this dough and how to use it showing my tips and tricks to get an excellent pie.
