When you need a light supper for two in a hurry, this British comfort food fills the bill for very low cost.
1 cup bread crumbs (unseasoned)
1 cup milk
1 tablespoon butter
˝ cup diced American cheese
1 egg
1/4 teaspoon each salt, pepper
2 teaspoons Worcestershire sauce
2 pieces toast
Soak bread crumbs in milk until mushy. Melt butter in nonstick skillet and add bread crumbs and cheese. In the same bowl that soaked the bread crumbs, whisk egg, salt, pepper and Worcestershire. Stir into the skillet, cover and cook over low heat until cheese melts. Serve over toast. Serves 2.
Cook’s note: You may want to pass the Worcestershire for those who want another shake or two. It’s not traditional but this is also good with ketchup, hot sauce or a few drops of soy sauce.
