Salmon Patties & Sunset

Tonight's dish, as I watch the sunset.

Salmon Patties

1 can red salmon (with juice)
1 egg
2 tablespoons plus 1 tablespoon flour
2 tablespoons instant mashed potatoes
cayenne pepper to taste
black pepper to taste
1/4 cup veg oil


Combine the salmon, egg, 2 Tbs flour and dry mashed potatoes, mixing until fairly smooth. Form into patties, but be gentle. Don't pack it together tightly, just loosely form into patties.

Heat the oil in a skillet, over medium low heat. Coat the patties in the remaining 1 Tbs flour. Place the flour coated patties in the skillet, season with the red and black pepper, and fry until the first side is browned. Turn and brown the other side.

Remove to a paper towel to drain the grease.

Chow down.

Geeeez, and I settled for left-overs watching a re-run of Three and a Half Men. No red wine, but I did have a Bud Light Lime left over from SuperBowl Sunday! Ohhhhhh Bill, I sooooooooooooooo want to go camping.....

Last night, we watched "Salt". That's an action movie if there ever was one. Great plot!

I passed this recipe on to "Chef Don" (gawd it's great living with someone who loves to cook!). Hopefully we will try it soon

And don't forget to smother them in white sauce.

I use crushed saltine crackers instead of flour and instant potatoes (add the "e" when making potato plural). Makes a great sandwich with a leaf of lettus and some tarter souce.
