My Ford is essentially the same: Tow/haul mode does have overdrive (actually torque converter lockup), changes shift points, and enables engine braking (transmission downshifts) when going downhill and touching the brake pedal.

Yeah, it says D is overdrive and you can run it in D with or without Tow/Haul but it still references D as overdrive. In other words, I don't think you "turn off" overdrive on this vehicle. I think the tow/haul function has replaced that.
