I would say it depends on how long you plan on being off shore power. If you are just doing it for an overnight stay, one battery should be enough (assuming you keep an eye on your loads). Going longer than a night, you will be much happier with 2 batteries. By watching your loads you may even get a 3rd night out of 2 batteries. The key thing is not to let the batteries voltage drop below 12Volts. Add an inverter and yes, you will need 2 batteries. Invest in a digital voltage display, there are a lot of them on Amazon, so you know when to shut down.
You will also need to charge them by using a generator or your TV for a while each day.
