I'm told the newer tanks have baffles to prevent sloshing. I don't know if that's true, and I don't know if the older ones didn't. I guess the question becomes - Why would you put baffels in a water tank?

SLX is the light weight option, isn't it? Full tanks might put you over your GVWR. Just a thought.

All the tanks would not be full
thst makes no sense
There is adequate payload to carry fresh water as long as you remember to count it as cargo

We have a 2019, 212QBW. We dry camp in Idaho in forest service camp grounds, or disperse camping. I have gone to camp grounds that have signs up that said the water is turned off. This could be to the camp ground pump is out of order or the spring is contaminated, no water to have. I always fill my FW tank at home. When leaving I empty the gray tank on the ground. The black tank I empty at my home sewer system. If the tanks cross supports should break I will have to put in heaver ones.

I think baffles in the black tank would be a very bad idea for obvious reasons. I could see baffles in the fresh tank but them seem unnecessary

Don't know about SLX = light weight. The unit has twin axles and no, the weight of water plus wat I plan to bring does not put me over weight.
