That's my plan for my 2001 23b Kiwi. In my opinion the options vs price are much better for vehicle units vs RV specific units. An adapter plate is not expensive. Someone who is handy can even DIY fabricate an adapter and DIN mount.
I installed a Kenwood radio (head unit) in my 2004 Sprinter van. Purchased from Crutchfield.

We can connect all types of music devices to that head unit... and if you install the Bluetooth mic you can interface your cell phone to it so no need to mess with the volume when on the cell phone. Higher end units accept multiple cell phones. I am installing a similar unit in my 23b this Spring.
