That's one reason why I wanted to see a picture of his converter insides.

As far as I know that's only with the PD converter panel. If you have a WFCO panel I'm pretty sure it doesn't have that option.

If you disconnect the battery no matter what system you use there will be no charge to the battery. There is a disconnected circuit. Ground connections can be poor on the TT chassis and a power converter will find another way to find a chassis ground.

I'm wondering if the AC load from the converter is causing the generator to overload and drop AC power

Drawing too many amps from the generator.......

The converter is entering a charge mode when he adds the battery load to the DC output side. Without the battery load, the converters draw on the generator is low and below the generator output threshold.
