The residential fridge can draw a lot of power. The batteries will power it through the inverter for a short time. Maybe overnight. You’d need a lot of solar to refill those batteries from fridge use. One panel is probably not going to do it. Aside from the time you spend driving, you really want shore power or a gen running to keep a residential fridge going and you’re batteries from getting too depleted.
As far as keeping the doors open. If all is dry and cleaned up when you go to store it, it should be fine closed. I’ve done both with mine, and can’t tell any difference. It doesn’t trap moisture quite like the propane/electric fridge.
