Our hybird weight is 3500 lbs loaded. Do we need the 5000 lb? Is the 2000 lb to under raided and will fail because the trailer is 3500 lbs ?

You’re only lifting the tongue of the trailer, not the whole trailer. Tongue weight is 10-15% of total trailer weight. You should be fine with a 2000lb jack. However you can get a hard wired (to your battery) electric tongue jack for about $200-$300.
