We had the same problem and we started carrying a cooler as we got tired of loosing food. So this is what we found out and what was happening is the cooling coils were frozen over. They are behind a planet in the refrigerator side.
We were only a year into warranty 2018 Jayco Eagle. There is a air deVegter valve that takes colder air from freezer side that is on the top left of refrigerator side. You can remove two screws and take it out and see if it moves ok. They replaced mine but it did not fix the problem but is reported to be the fix but wasn’t in our case.
Tech said the freezer door gasket was letting moisture in and it caused the coils to freeze so it quits cooling. Put a new freezer door on.
So every trip back out we didn’t know if fixed or not and every time out it quit for a half dozen times. Finally we would just turn it off and defrost it with hair dryers or blow a fan on it with doors open for a few hours at minimum and it would work until freezing up again.
He put 3 doors on and every one of them had gaskets looting installed. He was very good and experienced and didn’t put up with poor quality so we would just wait again for a replacement and use a cooler when it quit.
Last repair was last fall and we are out of warranty and didn’t head out for another trip but I did leave it run for a month or longer and no ice build up. Keep in mind you don’t see the ice as it’s Behind the panel. We now know how to remove it to help defrost faster.
Very frustrating and expensive loosing all the meats etc. and having to carry a big bulky cooler is inconvenient.
So our story. First try the air diverter as it is super easy to remove and unplug and inspect. It does take a nut driver not a screw driver. Most small socket sets come with them. 1/8 is from memory. Finally bought a nut driver to carry with us.
Good luck and happy to talk with you
