Yep, weight difference. Light trailer and a bunch of weight change. The fluids weigh a lot and you shifted weight from forward of the axles to well behind the axles. Bumper pull trailers of any type react very badly to poor balance.
If you have to do this again then just keep your speed down until you can get to a dump station.
FYI, we always dumped our grey tank to a nearby bush or ditch. Check local laws before doing so. If you are in a designated watershed it is probably frowned on.
