What year is your trailer? According to Jayco’s specs a 2020 183RB use a 2 5/16” coupler and a 2021 183RB use a 2” coupler. You definitely need to confirm what is stamped on your trailer.

I've checked and both the ball and the coupler are 2" (they are both marked as such).
@damaltor - you are correct, I have a 2021 183RB so that makes sense that it's 2".
So, back to my original issue, since the ball and coupler are correctly matched in size, it may be that the ball was not fully in the coupler, but I doubt it, as it looked good to the eye.

It is easy to drop the Hitch over the ball if the latch isn't fully open. It may look latched but without lifting the tongue and physically checked you would never know. As others have said it's part of my hitching routine to lift the tongue and watch it lift the back of my truck every time I connect to a trailer...

Please post a picture of the top and bottom of your 2" hitch coupler.
Some 2" couplers have a threaded adjustment on the underside to grasp the ball. That is not the case with a 2 5/16" coupler that larger trailers are fitted with.

It could be that after you put coupler on the ball you did not latch it down.
Then after that you should always put a lock thru it to keep it form bouncing off.
You either didn't latch down the lever of the coupler or when you did the curb bounced it up and therefore causing it to bounce off as there was no pin/lock thru the latch.

I know one thing for sure, before I pulled that trailer again I'd hitch it to the tow vehicle with the coupler lever locked down and lift the trailer with the tongue jack to see if it stays on the hitch while lifting.

This happened to me with my boat trailer, even though it looked like the coupler was fully seated on the ball it wasn't and as soon as I went over a speed bump in the parking lot the trailer came off the ball.

If the sizes match and you connected to the ball correctly it may be that the an adjustment of the hitch is required. Usually a nyloc nut on a bolt connects the flip down locK. You can tighten this nut to cause the lock up to be tighter.

When you close the latch on the ball there should be some tension in the lever. If it closes easily, it is to loose. Adjust the nut until it takes a little force to lock it down.

Just an affirmation of Route 66 Traveler's comment, "Never trust Camping World." As many of you have found out, the sales reps often have very little or no experience camping with any kind of RV. Therefore, find out if your sales rep has ever used, rented, owned or been in an RV other than when trying to sell one. Even some technicians will give false or misleading answers to questions they don't know the answer to. Case-in-point: a retiring US Navy vet was moving his family from Virginia Beach to AZ. He rented their largest truck and a tow dolly for their car. U-Haul said they had to connect the dolly to the truck and secure the car to the dolly. When he came back from U-Haul the dolly was NOT connected according to their own instructions posted to the tongue of the dolly. They did NOT cross the safety chains which caused the chains and the electrical harness to drag on the ground. Fortunately he came back to the house before hitting the road and we were able to correct the problem.
As a side note, be aware that some states REQUIRE that you cross the safety chains when you connect your trailer, dolly, boat, etc. This is to provide a cradle for the tongue of the towed vessel to rest in so it doesn't drop to the ground and dig in! When that happens all bets are off. In addition to the aforementioned checks to insure your towable is secure to the ball, ALWAYS cross your safety chains!
Find as many seasoned RVers you can to learn the tricks of the trade. I have learned a lot in the campground from fellow travelers and have always found all RVers willing to share their knowledge and lend-a-hand.

Similar thing happened to us while pulling the Boy Scout trailer with our F450. Going through construction on the freeway, hit a bump just right and the trailer disconnected from the truck. I always verify, including jumping on the trailer tongue to make sure it stays in place, which it did. It was locked down. So how did it come off? Very good question. Thankfully we also had chains and they held the trailer from going off the road.
