I had the same issue with my RV and there are two reasons. First, the flex hose you have is not meant to go with the PEX connector you have. I don't know why the RV manufacturers use it. The flex hose is just a bit bigger than PEX pipe and will eventually cause a small leak. The second problem is the connector itself. As you suspected, the little yellow gasket is crap and if you overtighten them they will start leaking. My advice would be to replace the connector with a brass one, they have better quality gaskets and then replace the flex hose with PEX pipe.
