Cut-off switch on the chassis battery

Considering a cut-off switch on the chassis battery. Do I apply the cut-off switch to the positive or negative pole...???

You would not disconnect you car battery positive first, would you? You always disconnect the negative, then the positive. You always reconnect positive, then negative.

Adding additional hot terminal connection points that could come in contact with with tools or fray or come loose is asking for trouble. The cables and terminals on both sides of a negative cutoff switch would be safe. That isn't true with a positive connected switch.
