The one back by the bumper is your fresh tank drain.
I haven't looked at how it's plumbed in my greyhawk, but on my trailer, the fresh tank drain was plumbed inline with the water pump supply, so even if you wanted to run the pump to get more water out, it didn't make a difference.
But I would try to run the pump to see if you can get any more water out of the tank, and especially the lines.
Really, for winterizing, having some water in the tank won't hurt anything, you really need it out of the water lines and fittings. There is enough room for expansion if the water in the tank freezes, but that's not the case for the lines and fittings.
If I were you, I would park on an incline, drain as much as possible from the standard drain, push up on the bottom of the tank while running the pump to get as much more out as possible, make sure the pump is not picking up water, and then winterize as normal from there on out.
