This was going to be my suggestion. I've seen older homes with older acrylic tubs, cut to make a step-through entry. Fill the gap with spray foam, bond some sort of flexible acrylic to the cut opening, which should have some radius to it vs squared...OR if it is squared, that could be oaky for 3 pieces, caulked with silicone on where they meet.
I was just working with large acrylic panels they use for shower surrounds. I had my shower redone and asked for the left over pieces to be left behind. I used it to line the bare luan cavity of my camper. The access space was meant for 2 way fridge access, but now it's storage, with a water resistance surface on all sides. They're pretty flexible when cut into strips that are only a few inches wide and bond easily with any type of bonding adhesive.
Cut tub opening (step-through hole) fill with spray foam, top with the strip of acrylic. Caulk all edges. I can imagine a strip of this stuff cut to the thickness of the tub wall, and flexed into place to top off the exposed step-through opening, might just work. OR the 3 piece suggestion.
