I am assuming you have a unit with a 30 amp power unit and, in fact have the energy management system from the factory. I have a 2017 GreyHawk 29W. I have two A/C units on the roof. Most R/Vs with two A/Cs run on a 50 amp circuit, which is more than ample to handle everything in the coach that runs on electricity, and all at once. The GreyHawk and most Class C motorhomes come with a 30 amp circuit that limits the amount of current that can be used at one time. With that being said, If I want to run both A/C units, my microwave, all of the interior lights, the coffee pot, etc. all at one time, it will exceed 30 amps. So, rather than trip a circuit breaker, the energy management system, if equipped with one, will shut down what it has to in order to keep things within the 30 amp parameter. An example would be for the management system to shut off one A/C compressor until the load returns to being within the 30 amp range. I hope this helps to understand what the energy management system does. Also, when you are plugged in, or on generator power, the system will display just how many amps are being consumed at any given time.
As to the bathroom switches, mine has 4 and they control the bathroom light, the hallway light, the shower light, and the ceiling fan in the bathroom.

Thanks for the reply. I'm waiting for my 29MPV. Btw, what kind of house battery do you have and was it the factory battery that came with the unit?

On our 2015 Greyhawk 31 DS, we have three, One in the bathroom, one in the galley at the monitor panel and one at the outside water connection panel. Starting with the 2016 model , Jayco did a bit of a redesign for the Greyhawk. Sounds like the manufacturer may have "cheaped" out a bit with this new model run.

Yes, it’s the one that came with the unit, but I added two more and placed them in a black diamond plate box on the rear bumber. A very neat installation. I dry camp most of the time on the desert and they last me for a week or more with just running my generator for coffee pot and microwave.
