The sub frame was three inches, plus other hardware raised the rear over 5 inches.

Very nice, and very smart to add the hanger cross members. Have them in mine with no lift.

I will have to measure it again for you. But, our Ram came with the Heavy Duty package, the rear only goes down about 1.5 inch when we hook our trailer to the truck. Your GMC may be a bit lower than the Ram, but I'll measure it just in case. Stay tuned...

You should be fine, mine ended up really close to level with my 2013 GMC 2500HD. Everything was done with hitch adjustments (no subframe). I also ordered the camper with the larger MAXXIS tires so that added a 1/2" of height. I happen to have the Reese Revolution pin box paired with the Reese Pro Series 16K hitch.
From my own reading, this height issue seems to be more prevalent with the RAM trucks with heavy duty suspension.
EDIT: My Reese hitch has at least one more set of holes to adjust the nose lower, but decided not to do that until I hooked up after getting the trailer fully loaded to see how it sits (vs empty, which is what my picture is of on the drive home from the dealer)
I plan to go to the scale at some point, but my guess is I'm going to land around 9500# for the trailer.

I have an 03 1500hd with a 3 inch lift and 33 inch tires I am pretty close to the same height as most 2500hd's. I also ordered the 16inch wheel upgrade on the camper but I did take some measurements of my TV and FW both sitting on level ground. I opened my tailgate and from the ground to the top of the tailgate is 36 inches, my hitch from the bed to the top of the hitch is 16 inches. So all together my hitch plate is 52 inches off the ground. the bed rails are at 57 inches off the ground. Next I went to the FW and measured from the ground to the kingpin and it is at about 49 inches which is good because when I hook up the truck squats about 2 inches or so

I have you tried the leveling system with it raised? Since the rears seem to not have a lot of stroke wondering if you might run into problems?
