Looking for advice on smaller models.
I'm currently in a truck camper...took a year to travel, and I've decided I want to full time. WI summers, AZ winters. So I want to upgrade. It's just me, so I don't want/need something big...just something easy to tow and easy to hitch/unhitch. Finding smaller 5th wheels is not easy!
First is a 25' Jayco 255 RKS, wood frame, aluminum skin, about 6100 #, in very good condition. One small slide.
Second is a 2002 Eagle Summit 28', aluminum frame, fiberglass skin, about 8300#, also very good condition. Two slides.
Any opinions as to the quality of these two models?

Welcome to the JOF and happy trailer hunting.
I can't help with info on either of the two trailers you mentioned, but I do have a question: Are you limiting your search to only 5th wheel trailers?

Yes...
It seems to be the consensus that 5th wheels are easier to tow. I also like the 5th wheel set-up, with the bed somewhat separate from the rest of the camper.
I'd be willing to hear any thoughts on tow-ability.

NO! Don't go down the rabbit hole on towing TT vs 5th wheels! Trust me, you don't want your topic buried it that never-ending discussion! 
I've towed both and like both... but I like what the TTs offer; that's why that is what I bought. You like what the 5th wheels offer. But like you said, there are not as many of those. That's OK. You only need one.

The tow vehicle is very relevant. It has more to do with ease of towing than RV design IMO.

my truck
I have a Dodge Ram 2500 Heavy Duty long bed 4x4, with a Cummins diesel engine. It already has a gooseneck ball hitch. I understand that ball hitches are generally used with livestock and horse trailers. But I have read that there are adapters. I've already factored in the cost of getting the right hitch.

I also have towed both TT & 5W and I prefer the 5W as it seems to have more outside storage. The two slides will also give you more floor space inside, especially for full timing. my $.02
