Tankless to Tank Water Heater

Hello guys/gals!
We have a 2018 Eagle HT with the Girard tankless water heater and we hate it! We would like to switch it out for a 10 gallon water heater with a tank. I know some have made the switch and I would like to tap into that knowledge and find out hard the job was. I am pretty handy and can tackle the job just looking for a general idea of making the connections and changing over the switches. I really appreciate any help you could provide!

Have to ask... why do you hate your tankless water heater? I've got one in my rig and I can take a hot shower until the cows come home (or I run out of propane).

I did the swap out on my Greyhawk but used a 6 gallon model. Here is the link to my detailed post on the swap.

When we camp in Colorado the water coming in is very cold and the water heater will not heat it fast enough and still maintain the required flow rate.

When we camp in Texas during the summer the water coming in is too hot and we end up with scalding hot water.

It's so finicky with flow rates and incoming water Temps, it just shouldn't be this hard to get warm water 😂.

We also went from the Girard to a tank heater and I measured everything and found that a 16 gallon heater would fit. The only problem that I had was I had to expand the opening about an inch so had to cut a bit of the sidewall. Now my shower is maxed out at about 15 minutes before I get the cold shock.
