Water tank full?

We have a 2020 Jayco North Point. Question on filling with water. How do you know when tank is full? The guide/register said full so we shut off. When we got parked it was down to 2/3 measurement. Today (after 2 days and only 2 adults) we are down to 1/3 so wondered if we are really filling it full? Basically have used kitchen sink a couple of times, bathroom sink and stool and one “quick” shower. Are we not filling it full or does it just not hold much?

You can fill it until water comes out the overflow which should be around the right rear tire. You have to be careful about the "siphon effect". Depending on how the overflow hose is ran from the tank. Once water starts coming out the overflow it might not stop until the tank reaches some level much lower than full. This can also happen while traveling down the road and water sloshes around the tank.

X2, fill until the overflow drain starts to flow.

Now, sometimes you do need to adjust overflow tube, as the "loop" aka the high point is not high enough up and the water will siphon out of the tank after you fill it up. Common issue on a lot of campers. Honestly, I have not heard of the complaint on a NP.

We had the siphon problem on our 2017 Eagle HT 24.5 CKTS. There is a fix that the dealer can make but you have to ask for it - at least we did and the fix resolved the problem. From what I was told the fix involved adding a fairly big loop to the overflow pipe. The larger loop appears to stop the siphon. The dealer made the fix under warranty.
