Here's your answer. If you don't trust your LEDs (who does?) Take a flashlight and shine it down the open commode. You should be able to see a piece of PVC about 3-4 inches in diameter and 8 -10 inches long reach down into your black tank. You should also see the water level in your black tank. When that water level reaches the bottom of that PVC pipe you are FULL. Dump immediately.
Most people do not wait till FULL occurs but by doing this you will eventually learn how much water your tank will safely take.

I usually use the cap from the Calgon. One each of the liquids and 2 of the Borax. That has worked well for over 2 years now.

Yes, it's TST Orange. I used one pouch of the "drop-ins", but they disintegrated on me. So now I use the jugs of liquid.
In our temps, nothing seems to last..

Yes, if the stuff shoots out of the roof vent it is definitely time to dump. Worried about that a few times but never had it happen. Seriously, two people can probably go anywhere from one to two weeks without dumping. The best indicator of the need to dump in what politicians call the “smell test”, when it stinks it’s time. We keep ours at home so we always dump before getting home. Once we dump I put some water back in the tank and add some chem to the tank to keep things from drying out.

Great idea but my gauges have shown 2/3 or full for several years. I probably screwed something up and ruined the sensors, but from what I’ve read, messed up sensors is very very common. My fresh and grey work fine, but the black water doesn’t and despite trying several solutions nothing has worked to fix the problem.

Because they rarely work. Tank level gauges are the most unreliable items on an RV.

Everything. Gauges are often wrong because they become fouled.
And you cannot always shine a flashlight down the toydie because not all tanks are right below in clear view.
You just have to know your rig, your personal habits and so forth. When in doubt, dump it out. It doesn't cost but a few minutes of time.

And I KNOW my seal leaks so I dump after a few days, just the two of us and I check the tank monitor, and when it triggers full, I dump. By then, I have enough greywater to rise the sewer line.

I wouldn't use bleach. It would kill any good bacteria you might have in the tank. Besides, the smell would be pretty intense. Also if you use cleaners for your bowl they could react with the bleach and cause some nasty fumes.
